I remember hearing a quote that was along the lines of:

"What view isn't more beautiful when looking back."
or possibly
"Is there any view that does not look more beautiful in hindsight."

Does anyone know the exact wording and the source of this quote? Any help much appreciated.

You might want to search for the origin of the statement "Hinsight is 20/20".
I no longer have a volume but there is a reference source for statements and phrases called the "Morris dictionary of word and phrase origins" Something may turn up there. - Good Luck.

Could it be Thomas Campbell (1777-1844) who said

" 'Tis distance lends enchantment to the view
And robes the mountains in its azure hue" ?
